Preparation
- Add the entrails, onions, garlic, parsley and cilantro in a cooking pot on medium heat
- Add all the spices and leave for 30 minutes
- Add tomato paste and leave for another 15 min or until cooked
- Serve on a plate with green olives and slices of pickled lemons
